Raspberry, prosciutto & goat’s cheese salad
Serves 4 as a side Prep 15 mins
1 radicchio or red oak leaf lettuce, leaves separated and coarsely torn
60g pkt Coles Australian Baby Rocket
125g raspberries
1 orange, peeled, cut into segments
4 radishes, thinly sliced
1 small red onion, thinly sliced
12 slices prosciutto, coarsely torn
100g goat’s cheese, crumbled
½ cup (60g) walnuts, toasted, chopped
Coles Bakery Stone Baked White
Sourdough Vienna^, toasted, to serve
Raspberry dressing:
40g raspberries
2 tbs sherry vinegar
2 tsp Dijon mustard
1 tsp caster sugar
⅓ cup (80ml) walnut oil or avocado oil
1. To make the raspberry dressing, place the raspberries in a food processor and process until smooth. Add the vinegar, mustard, sugar and oil and process until smooth and well combined. Season.
2. Arrange the radicchio or lettuce, rocket, raspberries, orange, radish, onion and prosciutto on a large serving platter. Drizzle with the raspberry dressing and sprinkle with the goat’s cheese and walnut. Serve immediately with sourdough.
